Brownies

Ingredients
  • 2 squares unsweetened chocolate
  • 1/2 stick butter
  • 2 eggs, well beaten
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Method
  1. In the top of a double boiler over the heat water, melt chocolate and butter together. Remove from heat and add all remaining ingredients, blending thoroughly.
  2. Pour batter into a buttered 8-inch square cake pan and bake in preheated 350-degree oven for about 25-30 minutes. When a straw or knife poked into the center comes out clean, brownies are done.
  3. Let cool slightly, cut into squares, and remove with a spatula to a cake rack for further cooling.

Scrambled Eggs with Cheese

Ingredients
  • 2 tablespoon butter
  • 4 eggs
  • 1 tablespoon water or light cream
  • 1/3 cup diced cheddar cheese
  • salt and pepper to taste

  1. Melt butter in an 8-inch frying pan.
  2. Crack eggs into a mixing bowl.
  3. Add water or cream to the eggs and lightly beat with whisk.Add salt and pepper.
  4. Pour eggs into the frying pan and cook over low heat. Add cheese, stirring constantly with wooden spoon, until they are thickened but moist.
  5. Remove from heat.
