Fresh Pasta

If you make too much pasta, you can freeze the extra batch, or let it dry and store it covered in a dry place.

Ingredient:
-3 cups all-purpose flour, unsifted
-4 eggs
-salt to taste

Method:
1.Put the flour and salt in the middle and mix together with your hands.Take a rubber spatula and neatly push the flour into a small mound.
2.With your hand, make a hole in the middle of the mound. One at a time, crack the eggs and drop them into the well. Using a fork, slowly incorporated the flour into the egg until the dough is stiff and all the flour is mixed in.
3.Form the dough into a ball and knead the dough until it is fairly smooth, which should take 7-10 min. Let it rest for 30 min. Now you ready to make your pasta.
